Apple Nut Loaf
1 cup oil
2 cups sugar
1 tsp. vanilla
3 cups apples, chopped ( I use Granny Smiths & chop the apples in a food processor)
3 cups flour
1 tsp. cinnamon (I use Vietnamese, see below)
1 tsp. soda
1 tsp. salt
1 cup chopped nuts (optional)
Combine and set aside the oil, eggs, sugar, and vanilla. Sift flour, cinnamon, soda, and salt. Add dry ingredients to oil mixture gradually. Add apples and nuts. Bake in 2 regular loaf pans or 3 foil loaf pans.
I bake it at 350 degrees for about 60 minutes or until golden brown.
Cool 10 minutes in the pan. Sprinkle with sugar, if desired. Remove loaf and wrap in waxed paper while still warm (about 20-30 minutes). This keeps the bread from drying out and softens the crust.
